Chicken with Lime-Ginger Sauce

Today’s recipe comes from Healthy-Quick-Meals.com.

Prep Time: 10 minutes    | Cook Time: up to 1 hour

Ingredients

  • 2 pounds chicken pieces, skinless (mine were also boneless)
  • 1 cup plain yogurt (I used low-fat)
  • 3 tablespoons lime juice
  • 2 cloves garlic (I used 2 teaspoons of minced garlic)
  • 1 teaspoon ginger root, grated (mine was ground)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 375 degrees F (190 degrees C)
  2. Place the chicken in a greased baking dish
  3. Mix all of the other ingredients together
  4. Spoon the mixture over the chicken. Turn the chicken pieces to coat both sides.
  5. Bake for about an hour, or until the inside of the chicken is no longer pink and has reached an internal temperature of 165 degree F

It seemed to me like this didn’t come out perfectly, but it’s possible that I should have left it in the oven longer. It was still pretty tasty, definitely a strong and tangy flavor because of the yogurt-based sauce. If you like the sound of these flavors together (yogurt, lime, ginger), then you’ll probably enjoy the dish.

Oh, and apparently it tastes good both hot and cold. I wanted to try it cold, but I ended up eating all of it while it was still hot. Sorry.

Also, I’ll be sure to clean my kitchen before the next Chef JAJ. Sorry about that stovetop.
